About Zyme

Celestino Gaspari founded Zyme in 1999 and built the winery inside one of the old sandstone quarries of the Valpolicella, so the barrel cellar is literally cut into the hill. It is the architectural stop of the valley, with tours and tastings of Amarone alongside experimental blends, and it is a short drive from Speri.

Visitors single out sandstone quarry cellar, striking architecture, experimental blends. The wines to look for are Corvina, Rondinella, Oseleta, Croatina. The estate dates from 1999.

Visiting

Book ahead. Honest 1 hour 30 to 1 hour 45 minutes from Venice to San Pietro in Cariano on the A4; Soave is about 1 hour 10 minutes.
