For the small-grower, hands-in-the-soil side of Lavaux, head to Domaine Blaise Duboux in Epesses. Blaise farms barely five hectares his family has worked for roughly five hundred years — he is the seventeenth generation — and is one of very few to tend these vertiginous terraces organically (certified since 2018) and biodynamically. Rare among growers, he bottles from both of Lavaux’s Grand Crus, Dézaley and Calamin. The cellar opens on Saturdays, with tastings often led by Blaise himself.
